Blueberry Protein Maca Muffins!

Need a healthy morning or afternoon snack? These are PERFECT! These blueberry muffins are packed with all the goodness you need in your snacks, carbs, protein and fats. 

This recipe has been adapted from one I was given by my nutritionist, so I know they are super good for you, and I've added a couple of my favourite ingredients extra to make them even more YUMMY!

The recipe is super simple, just mix your wet ingredients seperately first, then add them to your dry ingredients and bake for about 25 minutes at 180 degrees (fan forced). 

- 1 cup oat flour
- 1/4 cup almond meal
- 2-3 scoops whey protein powder
- 2 or 3 tbsp Maca powder ( I use Active Foods Australia)
- 1 tbsp cinnamon
- 1 tbsp ground nutmeg
- 1 1/2 tsp baking powder
- 1/2 tsp bicarb soda

- 3 egg whites
- 1 cup apple sauce
- 1/2 cup no fat Greek yoghurt
- 1 cup frozen blueberrys
- 1 tbsp natural honey

Recipe makes 12 muffins.
