Choc Coconut Slice!

If you have a super sweet tooth and you're looking for something a little less naughty - this is for you! I decided to make this when I was having HUGE chocolate cravings, and was inspired by a similar recipe I saw on Sarah Wilsons IQS website

Made from mostly natural ingredients this is refined sugar free and a perfect little treat.

Remember - even though this contains only natural sugars, it should still be considered a treat and eaten in moderation :) Enjoy!

Part 1: The Base:

- 1 cup wholegrain rolled oats (put them in the blender and blitz so they become a flour)

- 1/2 cup almond meal

- 1 egg white

- 2-3 tablespoons rice malt syrup

- 1 tbsp chia seeds

Mix all ingredients together & press firmly and evenly into baking tray. The mixture will be thick. Bake for 10-15 mins at 180 degrees (fan forced).

Once baked, remove from tin and allow to cool. Pop it in the freezer if you want it to cool down quickly.

Part 2: The Topping:

Making your own sugar free chocolate (this recipe is from the IQS website - head there for more amazing ideas!)

- 1/2 cup Cocoa or raw cacao powder

- 1/3 cup coconut oil

- 2 table spoons coconut cream

- 1-2 table spoons rice malt syrup

Heat in saucepan on a low heat until all melted and combine.

Take off the heat.

Add 1 - 2 cups of shredded coconut to chocolate mix. 

Mix together.

Add a drop of peppermint extract if you want a minty taste!

Add topping to your base and put in fridge or freezer to set :)
