1 cup basmati rice
500g Chicken thigh or tenderloin
1 cup Chicken or Vegetable Stock (salt reduced)
1/2 an Onion
2 cups Pumpkin (diced)
1 tsp Garlic
1-2 tsp Curry Powder
1 tsp olive oil
This recipe requires a slow cooker, however you can adapt this to cook on a stovetop.
Heat slow cooker & add olive oil
Dice carrots, onion and pumpkin
Add all ingredients (excluding rice) to the slow cooker
Cook on HIGH for 4-5 hours or LOW for 7-8 hours.
Stir every hour, chicken will fall apart as it cooks.
Cook rice. Ensure you rinse/wash well before cooking.
Either serve rice with cooked curry or mix through before serving.

I started training with El in January after about a year off exercise. With a few injuries I was terrified anything I did would set them off again. From the very first session with El I felt comfortable and confident to do any exercise she would get me to do. She is flexible so that anytime my injuries are playing up she will change up the session no questions asked! I have seen results in my fitness, doing things I haven't been able to do in years. She is an amazing trainer, I love my sessions with her (never ever thought I would say that about exercise)!
Training with El is by far the most fun I have ever had working out. She is a wealth of information and great at keeping you motivated to be the best you that you can be! El incorporates great variety into each session so it is never boring and it always keeps your body guessing. I started with El in January after recovering from a pretty bad knee injury. El has been super supportive and always willing to change up exercises to ensure I don't hurt myself. Don't get me wrong, she's a hard task master- in the best possible way! El is more than happy to answer questions, guide you with at home workouts and really pushes you to achieve your best, you only get out what you put in! El is always the best part of my week- she makes you feel instantly comfortable and gives you so much confidence in yourself. I've been going to El's bootcamps for a couple of years now and have recently started one on one sessions as well and I absolutely love it! The sessions are always amazing and I always find myself having fun in the process. Everyone always gives 100% and it's great to watch everyone improve. I have been training with El for a few months now and I am so happy with my results so far. After the last few years of back and knee injuries, with surgery on top and not so great trainers, I needed help. My main aim was continuing with a rehab problem tailored to me and getting fitter again. El listened to my story and straight away got me on track.I've lost 14kg since January, with an aim for 30kg. I've lost 2kg in the last month alone with about 7cm from inches around my waist, arms and legs in total in the last 4weeks too.Stability, strength and flexibility is a focus of mine in my back and knees. El has been training me for the last 4 months, in these past months I've become, thinner, fitter, healthier and happier then I have ever been! I came to El after watching a Victoria Secret runway and I decided I needed to start exercising. I've exercised in the past but I've never found anything I can stick to long term, until my first boxing session with El. It was hard but with Els encouragement I made it through the 45 minute session and I felt amazing! From there I got addicted. I don't even think about exercising anymore it's become a habit each day to work out with El or if I can't see her I follow her new leg and abs workout program. If your looking for a trainer who is dedicated, knows what they are doing and will offer you real honest advice to help you achieve yours dreams then El is your trainer. I never imagined 4 months ago I would've dropped to a size 6, become confident in the way my body looks as well as gaining a beautiful and supportive friend!
I completed El's custom personal training guides. I did the 5 week program and absolutely loved the variety and intensity to each session. How each day was allocated for a different body part allowed for recovery and straight to the point workouts. I absolutely loved it and am now about to purchase her 4 week lean legs and tummy toning guides. Definitely recommend the custom programs as its tailored to things you like. Can't wait for these new programs. Can't thank you enough el! ❣

I've did a month of El's online fitness program and it was so much fun! Fun seems like the wrong word for it, but its true! I told her I often got bored of the same stuff so she gave me such a variety, from weights, to body weight circuits, to specific cardio workouts. I loved it! Her support throughout (and after) the 4 weeks was amazing, always replied quickly to my many questions! The progress I've seen in my upper body especially is phenomenal, and I have El to thank for the guidance :) Definitely give her a go if you're after a personal, detailed program! xx
Words do not do justice to El and her program. I was a newbie to fitness. El's constant support, positivity and amazing programs helped me to become stronger, leaner and healthier.
